This is a gluten free alternative cereal grain which can also be used like spinach. The plant was a staple in the Inca and Aztec diet and is now highly under utilised. Used as a cereal, the seeds can be popped and are an excellent source of protein and dietary fibre. The leaves can be cooked like vegetable greens and the root can even be cooked as a vegie. The flowers are highly attractive to butterflies and bees.
